Manggang Hilaw at Bagoong
Unripe/Green Mangoes & Shrimp Paste

The pairing of sour, unripe mangoes dipped in salty, fermented shrimp paste may sound strange to some, but the sour crunch of the mangoes soon followed by the salty taste of bagoong is mouth-watering for many Filipinos. Think of it like a healthier version of salt and vinegar chips with its similar combination of saltiness and sourness and addictiveness.

This is like my most favorite thing to eat EVER!! :)

Nothing I love more than Filipino desserts!!  All filipinos live off of rice and LOVE coconut, so naturally most of the deserts are made from the 2 ingridients.  There is also glutinous rice sweets called biko made with sugar, butter, and coconut milk. (pictured above)  I would have to say that this is my favorite!  I can eat an entire platter in one sitting!!

Coconut Macaroons

Coconut macaroons are very popular in the Philippines and can be found in even the smallest of bakeries. Growing up, I thought all macaroons looked like this that when my mother brought home French macaroons one time, I said, “Those aren’t macaroons!”

Puto Bumbong

Puto Bumbong is made from soaked, ground glutinous rice called pirurutong, which has a distinctly purple hue. It is poured into bumbong or bamboo tubes, then steamed until cooked. It is topped with butter, fresh coconut shreds, & muscovado sugar (cane sugar) just before serving.

This dish, along with bibingka, is very popular among Filipinos during the nine day Simbang Gabi novena masses before Christmas.

singing in the rain

the best memories that I have about the Philippines, was when it would rain and I would see the kids in the neighborhood come out of the house and light up. at first my mom was hesitant to let me out, cuz she was afraid I was going to be sick the rest of our visit, but it was such a norm - celebration of life for kids! it was only a matter of time before my aunts would convince my mom to let me play in the rain. I can seriously feel the rain pound on my skin as I type this. the smell of wet pavement comes to mind and the sound of kids laughing and water splashing as cars pass by. rain in the philippines is like an ice breaker. making friends was easier with the rain as you shared a common bond, and brought all the kids playing outside with a natural high. I WANT TO PLAY IN THE RAIN!!

Thought I’d bring this back up!  Took a short hiatus, but re.starting this blog again.  The Philippine Islands!!  I miss it back home, but there are plans to go back in October.  A lot of little islands complete this country, and in each island omits a lot of diverse culture and languages of their own.
